Perfect Snack for Tailgate Season!
Peanut Butter Pretzel Bites
Calories are about 4,000-5,000 for the whole recipe depending on how much chocolate and sugar and pretzels you use.
Makes about 60-80 pretzel bites.
Ingredients
1 cup creamy peanut butter
2 tbsp softened butter
1/2 cup powdered sugar (you may need more)
3/4 cup brown sugar (you may need more)
Pretzels
1 bag semi-sweet chocolate chips (also try white chocolate or butterscotch!)
Directions
Mix peanut butter and the softened butter in a large bowl with a fork. Add the two sugars to the mixture. Test the mix to see if it will easily roll into a ball without sticking too much. If the mixture is still too sticky, add more sugar until you reach a consistency that is easy to roll.
Measure out about a teaspoon for each sandwich. Roll the teaspoon portion into a small ball, then squish it between two of your pretzels. Once you’ve made all your mini sandwiches, place the pretzel bits into the freezer for about half an hour.
Microwave the chocolate chips for 30 second intervals, stirring occasionally, until all of the chips are melted smoothly. Quickly dip your pretzel bites halfway into the chocolate. Once all of your sandwiches are dipped, return them to the freezer to finish setting up and then store in the refrigerator until serving time.
These make great snacks and would be perfect to bring to your next tailgate. Football season is right around the corner!
