The Cookie Exchange
Ah the holiday season- time for festive sweaters, decorating the office, and a delicious parade of food. All of this merriment leads to one thing: the infamous cookie exchange! Time to polish off your baking skills, dust off great grandma’s secret family recipe- you know the one 5 people died trying to get, and show off your cookies- all in the hopes that your co-workers will rave about your cookies, more than any others of course.

This year we had an excellent turnout at our office cookie exchange, and I have posted some pictures as well as some recipes (from people who were willing to share) below.

Cranberry Chip Cookies
½ cup sugar
½ cup vegetable shortening or margarine
2 eggs
1 tsp vanilla
1 cup flour
1 cup quick oats
1 tsp baking powder
1 cup white chocolate chips
½ cup dried cranberries
½ cup flaked coconut
Heat oven to 350°F. Combine sugar shortening, eggs, and vanilla. Beat with mixer on medium. Add flour, oats, and baking powder,. Beat low till soft dough forms. Stir in chips, cranberries, and coconut. Drop dough on ungreased cookie sheets. Bake 9 to 11 minutes.

Mint Brownie Bites
Needs:
-brownie mix (and ingredients it calls for)
-mini muffin pan
-mint & choc chip chip morsels
-mini baking cups
1. Preheat oven to 350
2. Prepare brownie mix
3. Add ½ bag of mint & choc chips into mix
4. Spoon mix into baking cups
5. Top off with mint chips
6. Bake for 17-18 minutes (this keeps them gooey, if you want them more cooked keep them in for 19 or 20)
