Happy Blueberry Cheesecake Day!
I promise I am not making this up at all, so for all you cheesecake fans, here is an amazing recipe for Blueberry Cheesecake. It is no-bake, and easy to make. Happy eating!
Amazing Blueberry Cheesecake Recipe Crust:
1 and 1/2 cups crushed vanilla wafers
1/4 cup melted butter
Combine the crumbs and butter and press into the bottom of a 9 inch spring form pan. Set aside.
Amazing Blueberry Cheesecake Recipe Filling:
1/4 cup cold water
1 envelope unflavored gelatin
2 (8 ounce) packages of cream cheese, softened
1 (7 ounce) jar of marshmallow creme
1 tablespoon lemon juice
1 teaspoon grated lemon peel
1 (8 ounce) container frozen whipped topping, thawed
2 cups pureed blueberries
Heat the gelatin in the water over low heat and stirring constantly until the gelatin is dissolved.
With an electric mixer on medium speed, beat the cream cheese until smooth. Gradually add the dissolved gelatin until well blended. Beat in the lemon juice and peel until blended and then beat in the marshmallow creme. Fold in the thawed whipped topping and pureed blueberries then pour over the crust.
Refrigerate until firm and garnish with whipped topping if desired before serving.
Serves 12.

Wow… I am trying to go on a diet, but this just looks very delicious. I love, absolutely love cheesecakes and my spouse loves the blueberry version even more. Might be time to put the diet on hold for a while.
