Delicious Valentine’s Day Dessert

I was watching TLC’s ‘Take Home Chef’ this morning while at the gym and I saw this decadent dessert that I must share. This is a dish I definitely plan on making for Valentine’s Day. When I saw how easy it was to prepare and how delicious it looked, it made me want to hop off the elliptical machine and run to the store (literally run to burn off the extra calories I’ll be consuming)!

Here it is…..

Chocolate Cheesecake Chocolate Cheesecake

Makes 6

Ingredients:

For the cheesecake crust:

8 ounces/225 g semisweet chocolate wafer cookies
5 tablespoons/75 g unsalted butter, melted

For the cheesecake filling:

8 ounces/225 g good-quality semisweet chocolate (such as Scharffenberger), chopped
1 1/2 pounds/700 g cream cheese, room temperature
1 cup/200 g superfine sugar
3 tablespoons/30 g all-purpose flour
2 teaspoons/10 ml vanilla extract
3 large eggs

For the chocolate sauce:

2/3 cup/155 ml heavy whipping cream
4 ounces/115 g good-quality semisweet chocolate (such as Scharffenberger), chopped

Method:

To prepare the crust: Finely grind the cookies in a food processor. Blend the butter into the crumbs to form a moist sandy texture. 

Press the crumb mixture evenly over the bottom (not the sides) of six 4-inch-/1-cm-diameter spring form pans. Refrigerate the crust while preparing the filling.

To prepare the filling: Preheat the oven to 300°F/150°C. Place the chocolate in a heat-proof bowl, then set the bowl over a saucepan of gently simmering water. Stir the chocolate until melted then set aside to cool to lukewarm.

Using an electric mixer, beat the cream cheese in a large mixing bowl until smooth and creamy. Add the sugar, flour and vanilla extract and beat until smooth. Add the eggs, one at a time, beating until well blended.

Stir the melted chocolate into the cream cheese mixture to blend. Spoon the cream cheese mixture over the chilled crusts, dividing it equally.

Place the cheesecakes on a heavy baking sheet and bake in the oven for 25 minutes or until the cakes puff slightly but the tops do not crack and are slightly darker in the center. The cakes will be slightly wobbly but will become more firm as they cool.

Turn the oven off and leave the oven door open to allow the cakes to cool for 1 hour. The cheesecakes will have cooled but will still be slightly warm. If desired, they can be refrigerated at this point until they are cold.

Meanwhile, to make the chocolate sauce: Heat the cream in a small saucepan over a medium heat just until it begins to simmer. Place the chocolate in a bowl and pour the hot cream over the chocolate. Let stand for 5 minutes to allow the chocolate to melt slightly.

Stir the cream mixture with a whisk until the chocolate has melted completely and the sauce is smooth.

To serve: Run a small sharp knife around the pan sides to loosen the cheesecakes from the pans. Release the pan sides and transfer the cheesecakes to plates.

Drizzle the warm chocolate sauce over and around the cheesecakes and serve.

Homemade Valentine’s Day Gifts

Going along with our ‘Homemade Valentine’s Day Cards’ blog, we thought we’d give you some ideas to make your Valentine’s Day gifts this year.  Even if this isn’t your main gift, doing something creative and from the heart means everything to your loved one!

Here are a few craft ideas from About.com:

Materials needed:

  • Cardboard
  • Paint
  • Glue
  • Candy Conversation Hearts
  • photo
  • Tape

Instructions:
Cut a rectangle shape out of the cardboard. The size you make the rectangle will depend on the size of the photo you are using. Cut a hole in the center of the rectangle where you will display the photo. Paint it red (or whatever color you desire). Set aside to dry.

Once the paint is dry, glue the candy conversation hearts all over the frame. Set it aside to dry again.

Once the glue is dry, tape the picture in the opening you cut in the center of the heart frame. Cut a small triangle out of the cardboard and attach behind the picture to make a stand, or you can even add a strip of magnet to the back!

Materials Needed:

  • Mason Jar
  • Spray Paint
  • Acrylic Paint
  • Old Paint Brush
  • Ribbon or Raffia
  • Stencil Cut-Out of a Heart

Instructions:
Wash jar clean with vinegar, let it dry. Place newspaper under project to prevent making spills with paint.

Make a heart-shaped ’stencil’ and tape it onto the front of the jar. Spray jar with the spray paint and let dry. Spray a second coat and let dry. Once dry, take another type of paint and old toothbrush, and splatter paint around your heart design. Let dry.

Pull stencil off gently, tie ribbon or raffia around the top of the jar and secure with bow. Place a candle in the jar or fill it with candy, and it makes a real cute gift!!!

Another way to do this is have multiple stencil hearts for each color paints. Place that stencil around the jar and gently blot it with the old toothbrush and paint. Let dry and repeat process with another color paint-overlapping when possible.

Valentine’s Day Dinner:

And of course there is always that saying ‘the way to a man’s heart is through his stomach,’ so why not find a yummy recipe to cook for dinner that night! It would be especially nice if you set the mood with music and candles. And made place setting cards out of construction paper! Finish it off with a delicious dessert too.

Change it up:

Does your significant other have a favorite cartoon? You can take whatever cartoon he/she likes and take out the verbiage from the cartoon (by putting white out over the words), then insert your words or a conversation that means something to the both of you (i.e your first kiss or the first time you said ‘I love you’).  Copy the cartoon on a copier machine (so the words you inserted look like it’s in the actual cartoon-instead of just being written over white out). Feel free to color it and/or matte it or frame it for your loved one!

Or, how about you take a poem from his/her favorite author? Or a childhood author? I’m actually doing this for my boyfriend’s Valentine’s Day gift, taking a poem from Dr. Seuss and changing the words (keeping the tempo the same) to make it applicable to him. It’s something very memorable and can showcase all the time and effort you put into it. To make it more decorative, you can use construction paper to add a punch of color or give it the ‘lovey-dovey’ feeling. I also plan on framing it for him as a one of a kind piece of art!

12 Tips to Over Eat ‘on the Down Low’ During the Holidays

Most people during the holidays are trying to find tips on how to NOT over eat. Our society has told us that we shouldn’t eat whatever we want during the holidays. Well, I’m here to say if you want to eat-then eat! In fact, we’re going to provide you with tips on sneaky ways to get food without anyone noticing (or most importantly judging) you!

1. This works well for Holiday parties at work. Ask to take a plate home for your “husband or wife”.

2. Get two plates of food/dessert like you’re taking it back to the table for a friend, at a work party, or for a family member at home. No one will think twice if your friend or family member comes back for seconds (which was really their first plate)!

3. Desperate measures? Ask your family members if you can take their plate in. Grab a bite of Grandma’s left over ham before throwing away the food & putting it in the dishwasher.

4. Get a glass (that you can’t see through) and tell your family your getting water. Quickly fill the glass with the chips/whatever and walk away casually.

5. Find a way to carry the food. If you’re a girl, then carry a big tote bag with you. If you’re a boy, simply have big pockets or a jacket-you can always wear a sweatshirt with a big pocket.

6. The holidays are a great time for pictures! So why not use your camera or video bag to store your food! If you’re carrying the case, no one will think twice about what’s inside-but you’ll know!

7. Zip lock baggies are your friend!! Be sure to have plenty stored in your pockets and purse/bags. To really get the maximum amount of food, switch them out when they get full. Once you have a selection, you can proceed to snack on them throughout the evening without even having to share!

8. Put some food in a napkin when someone’s back is turned and when you get a craving for something, bring the napkin to your mouth. Pretend like you’re wiping your mouth when really you’re stuffing it!  (Literally)

9. Appearances can be deceiving. Lets say you want to get more creative….use a cover. For example, if you are the hostess and don’t want your guests to know you’re sneaking a bit on the side, take a cleaning supplies container (obviously thoroughly cleaned) and store food inside of it. Your guests will just think you’re either going to clean something or putting back the cleaner. This can also work well with a tissue box, etc. Whatever will cause the least suspicion will work best.

10. Have a wing man; a partner in crime to help. He/she can help create a diversion when you go in for the kill. Of course, as partners, you have to return the favor by either hoarding enough food for the both of you, or creating a diversion for him/her.

11. A simple, but useful, tip would be to hide the extra food underneath other food on your plate. For example, you want an extra scoop of mash potatoes? Go ahead and put it on your plate but then minimize visibility by putting a roll on top of them.

12. And finally, something effortless would be to get in line for food first. Go through and get a plate. Run into your secret area (i.e. your room, or closet if you’re at someone else’s house) and put the plate down. Wait and then get into the end of the line and make like this is the first time. Say comments about how yummy the food looks, or how much you’re looking forward to getting some Mac and cheese.

12 Tips for Throwing a Tacky Christmas Sweater Party

Thinking about throwing a holiday get-together? ‘Tis the season for elusive, ugly and tacky Christmas sweater parties!  Tacky sweater parties are a perfect theme for a fun yet festive party. Follow these tips to throw a successful tacky Christmas sweater party this holiday that is cost effective.

1. Send Invitations: Send out an evite to all of your guests and have the image be a picture of you or your grandparents in their favorite holiday sweater. Be sure to provide all of the details (especially the fun ones like the games and prizes included).

2. Find the Best Tacky Christmas Sweater: The best part of the party is OBVIOUSLY the sweater. Here are some ideas on places to find these fabulous outdated fashion statements: Garage Sales, Family Members (aka. Grandma and Grandpa) and Thrift Stores.

3. Don’t Forget Accessories: Accessories can often times make the tacky sweater that much tackier! Go to your local drug store and look for lighted pins, reindeer antlers, Santa hats, tinsel and more!

4. Make a Centerpiece: Creating a neat centerpiece that can actually be devoured is ideal. Make a ginger bread house with candy and icing to use as a centerpiece for the food table. Something tells me that this will be eaten after tip #9.

5. Provide an Award: Have a trophy personalized that says “Tackiest Sweater Award 2008″. After all of the guests have arrived, simply have them write on a piece of paper who they think should win and then count up the votes.

6. Food: Select a potluck style that will work best for you and your guests. For example: (1) appetizers only, (2) bring your favorite dish, (3) assign each guest to bring an appetizer, main dish, or dessert, or (4) as the host, you will provide the main dish (a turkey, ham, etc.) Try and coordinate this in advance so you don’t have duplicate dishes.

7. Beverages: There are a variety of factors to consider when selecting your beverages for your party. It’s important to have something available for everyone’s likes and dislikes. Be sure to have a variety of mixers on hand as well as non-alcoholic drinks. Having a pre-made themed beverage also saves time and money while still being festive.

8. Keep the Bathroom Line Entertained: All those beverages can certainly call for a long line at the restroom. Decorate your bathroom door with wrapping paper, ribbon and a bow and have people sign the door and write a message on the wrapping paper. The messages are bound to be great conversation starters and ice breakers.

9. Play Games: Set up a scavenger hunt with two teams. Create a checklist of all the items to provide to each team. Each team is then responsible for taking a picture of each checklist item as proof. Here are some checklist ideas: Find a street name that has a Christmas theme, take a picture with your team in your sweaters in a 7-11, sing a Christmas carol to a stranger as team, Find a Santa and sit on his lap, kiss someone under a mistletoe, find something showing one of the 12 days of Christmas etc…) This is absolutely hilarious.

10. Give Prizes: The winning team of the scavenger hunt or games that you play can receive prizes. Some good prize ideas are DVD’s, gift cards, candles, books etc… Wrap them up and put them under your tree. You could always go the gag gift route as well.

Another Holiday Recipe from ForRent.com: Junior Mint Brownies

This was a recipe recommended by one of our own at ForRent.com. “Junior mints and brownies how can you go wrong?  The candy makes them moist and chewy and it’s a special surprise for your guests who just thought they were plain brownies.  Bring them to your next family event and I can’t guarantee they’ll let you take on the turkey next year but they might trust you with an apple pie or some Mac n’ Cheese.  I give them 2 snaps up!”

Junior Mint Brownies

Ingredients:

  • Cooking spray
  • 1/4  cup  butter or stick margarine
  • 32  (about 3 ounces) creamy, small-size mints in pure chocolate (such as Junior Mints)
  • 1  cup  all-purpose flour
  • 1/4  teaspoon  baking soda
  • 1/8  teaspoon  salt
  • 2/3  cup  sugar
  • 1/3  cup  unsweetened cocoa
  • 1  large egg
  • 1  large egg white

Preparation:

Preheat oven to 350 degrees.

Coat bottom of an 8-inch square baking pan with cooking spray.

Combine butter and mints in a 2-cup glass measure; microwave at high 30 seconds or until soft. Stir until smooth, and set aside.

Lightly spoon flour into a dry measuring cup, and level with a knife. Combine flour, soda, and salt in a bowl. Combine sugar, cocoa, egg, and egg white in a large bowl; beat at medium speed of a mixer until well-blended. Add mint mixture; beat well. Add flour mixture; beat at low speed just until blended. Pour batter into prepared pan. Bake at 350 degrees for 20 minutes or until a wooden pick inserted in center comes out clean; cool completely on a wire rack.

How to Avoid Overeating During the Holidays

This is actually the first post we’ve done regarding diet, but it is one that is near and dear to my heart. Last year during the holidays I searched & found an exercise regime that would meet with my holiday ‘sin’ such as cocktail parties, buffet dinner or dessert binges. But this post is more directed as proactive rather than reactive. Here are tips for you to avoid overeating in the first place during the holiday gatherings:

  • Portions, Portions, Portions: When you are getting dishes to eat make sure you pay close attention to the size of the portions you are choosing. The recommended size is the palm of your hand or smaller. Given that during the holidays there are a plethora of delectables to feast on, you may want to go smaller so you can enjoy all there is to offer.
  • Seasonal Favorites: It would be foolish of me to state that you should limit yourself to only 2 sides, when I know that I don’t do it. It’s hard with all the options to choose just a few but it might be easier if you were to look at it in a different manner. You’ll want to make sure you get seasonal favorites as those choices may not be around all year, so stick with those for your first round and if you’re still hungry then you can get other options. Wouldn’t you rather get cranberry sauce rather than bread and butter?
  • Know your limits: This seems to be where people get themselves in to trouble. With all the goodies everywhere they continue to snack and snack and snack, bringing plate 1 to plate 4 or 5. When you are eating it is important to listen to your body for signals that you are getting full. This will help eliminate the overfull belly which can sometimes be painful (I know)! Again, sticking with the first two tips try everything you’d like, but make it smaller portions such as slivers of deserts and go back for more if you want (and are able to eat it). Don’t hoard everything onto your first plate as you will probably feel more obligated to finish it.
  • Exercise: And keeping with my statement in the intro, exercise is a particular staple in my holidays. As I start to down my second sliver of pumpkin pie (personal seasonal favorite), I start to feel guilty. The easiest way for me to feel better about it is the promise to walk around my neighborhood twice afterwards (or do the stairs in my house a few extra times). I even ask my mother to join me so I’m still spending quality time with family. Exercise is important for any person, but during the holidays it is especially important as there is typically more stress and overeating.

With these tips in mind, hopefully everyone will be able to stick to their plan of not overeating. With the holidays being so close together, it really is key to be prepared so you can enjoy all to the fullest!
